Day 2 of my 365 day challenge: eat less meat and more beans
My mom and dad both like to tell me about the time they were so poor they only ate beans. My mom stayed home with me when I was a baby and in order to make ends meet they had to eat a lot of beans. When I asked my parents their advice for saving money they both told me (in separate conversations) to be prepared to eat beans. I decided to embrace this decision. In order to save money this year I plan to get creative with my bean recipes. In fact, we don’t even have meat on the menu for this weeks dinners.
Recently I went to a potluck where a friend of mine made lentil sloppy joes. I figured if lentils could replace meat in that recipe, I could surely do the same thing with tacos. I cooked about a cup of lentils, thawed some frozen black beans and put them in a skillet. I covered the beans with water and then added taco seasoning. I let the water boil off while I stirred the beans and ended up with something pretty similar to ground beef.
We put it into taco shells with all the regular toppings. It tasted so good that we didn’t even miss the meat. The best part is that the fiber and protein leaves me really full. Breastfeeding has made me hungry all the time and this recipe actually filled me up for once.
I have also been playing around with black bean burgers, but I haven’t found a recipe I like yet. Hummus is so expensive that I am going to make my own. There is a pot of chickpeas on my stove right now! I will post later with my hummus and black bean dip recipes. Super easy and cheap. Even better if you can use dried beans instead of canned.
